Roasted Radishes Carrot Cupcakes Thanks to its obvious association with the beginning of life, the egg has been the basis of many creation myths. It is a symbol of fertility, rebirth and the cycle of life - what Springtime is all about. I have always loved deviled eggs. They are not particularly fancy, but always tasty, and they hit the spot. For an Aries like me, they are delicious little bites that you can just pop in your mouth. Makes a great starter and a creamy classic appetizer for a party. The term "deviled", in reference to food, was in use in the 18th century, used most often referring to dishes with hot, spicy or zesty ingredients, including eggs prepared with mustard or pepper, stuffed in the yolk cavity.
Here are our Deviled Eggs made with mustard, mayo and cayenne from SIGNS & SEASONS, our astrology cookbook. We suggest to serve it on our cabbage and cilantro slaw, with cumin, hot sauce and lime juice.
For the eggs: 4 or 5 hard cooked eggs ¼ cup mayonnaise 1 tablespoon Dijon mustard 1 tablespoon mustard powder ½ teaspoon onion salt ¼ teaspoon cayenne pepper, more of less, to taste sweet paprika, for dusting capers or cooked bacon (optional garnish) Slice the eggs lengthwise. Remove the cooked yolks. Place in a bowl and crush with a fork. Add the mayo, mustards, onion salt and pepper and mix well. Gently spoon the yolk mixture back into the egg white halves. (Or you may spoon it into a plastic storage bag, snip off one of its corners and squeeze it in.) Divide micro greens, salad or slaw on serving plates. Arrange 2 or 3 egg halves on each. Sprinkle with paprika, and, if you like, capers or crumbled cooked bacon.
